Ingredients
3/4 pound trimmed boneless lamb shoulder, cut into 1-inch pieces
1 pound hot Italian sausage, casings removed
2 garlic cloves, minced
1 1/2 teaspoons ground cumin
3/4 teaspoon paprika
1/8 teaspoon cayenne pepper
Kosher salt
Four 6-inch flour tortillas, or pita bread
Canola oil, for brushing
Herbes de Provence
16 Bibb lettuce leaves

Directions
Pop the meat grinder parts in the freezer to chill completely.
Toss the lamb in a bowl and stick it in the freezer for about 10 minutes.
Grind the cold lamb coarsely, collecting it in your chilled bowl.
Mix in the sausage, garlic, cumin, paprika, cayenne and a teaspoon of salt until everything's well combined.
Shape the mixture into 16 balls, then gently flatten them into patties.
Fire up the grill or heat your grill pan.
Cook the patties over pretty high heat for around 6 minutes, flipping once - you want them nicely browned outside but still juicy inside.
Move them to a plate and cover loosely with foil to keep them warm.
Lightly brush the tortillas with oil, sprinkle with salt and herbes de Provence.
Throw them on the grill for a quick 20 seconds per side until they get those nice grill marks and turn crispy.
Cut the tortillas (or pita if that's what you're using) into quarters.
Serve the merguez on a platter lined with lettuce leaves alongside your grilled tortilla or pita wedges.

๐ŸŒ„ What's Up With The Images? Well, originally, we didn't have any pictures of the food at all. Intentionally! Because I find those sites with so many pictures that it takes forever to get through the directions to be annoying AF! I mean, seriously, if you need a picture to show you how to stir something, you shouldn't be cooking!
Then I decided to add pictures of the finished product when I remembered to take them, which isn't very often. There are a very few recipes which actually show some cooking steps, but not in the middle of the directions.
Anyway, recently I have discovered that AI can make credible images of the finished recipe. Is that right? Is it moral? Are robots taking over the world? Don't know; don't care. But I promise that unless you are a robot, your recipes won't turn out anything like the pictures.
๐Ÿ’ฏ Why There Are Recipe Numbers Missing: Well, it's like this. The recipe numbers are automatically generated by the database, always using a new number for a new recipe. Over the last 20 years many recipes, mostly test recipes, have been added and then deleted, leaving only their memory and their number behind. And there was also a lot of weird stuff going on in the beginning, which messed up the order. In terms of date added, the first one is #6, then #4, #9, #10, #4, #718!!!, #2, and finally #1. Just the way databases and poor programmers work!
