Ingredients
6 hard-cooked eggs, shelled and cut in half lengthwise
6 ozs. smoked salmon finely chopped
2 T. lemon juice
1 T. drained capers chopped
1 T. grated onion
1/8 t. freshly ground black pepper
2 T. mayonnaise
green scallion (flowers?) for garnish
Directions
Remove yolks from eggs and mash well in bowl.
Add remaining ingredients, except for egg whites, capers and green scallion, and mix well.
Use mixture to stuff egg white halves mounding mixture into the shape of an egg.
Garnish with capers and scallion flowers.
Chill well.
