| Filling: | |
| 1/2 cup packed brown sugar |
1/2 cup chopped walnuts |
| 1 tsp. cinnamon | 1 TBS. melted butter |
| 1 TBS. flour | |
| Batter: | |
| 1 cup sugar | 1/2 cup butter |
| 1 1/2 cups flour | 2 eggs - separated |
| 2 tsp. baking powder | 1 tsp. salt |
| 1/2 cup milk | grated peel of 1 lemon and 1 orange |
Directions
- Mix together filling ingredients and set aside.
- For batter, begin by sifting together the flour, salt and baking powder.
- Set aside.
- Cream butter, add sugar, add yolks.
- Mix in flour mixture.
- Beat egg whites until stiff and fold into batter.
- Pour 4/5 into a greased 9 x 9 pan.
- Sprinkle filling over batter, then top with remaining batter.
- Bake at 350° for 40 to 45 minutes.
