Makes 2 8-inch layers

Ingredients
2 cups sifted cake flour
1 Tbsp. baking powder
1/2 tsp. nutmeg
2/3 cup butter or margarine softened
1 cup sugar.
4 eggs
1 tsp. vanilla
2 1-oz. squares unsweetened chocolate, grated
2 Tbsp. hot milk
1 cup mashed potatoes
1/3 cup chopped mint flavored green cherries, drained (about 15 cherries)

Directions
Sift flour, baking powder & nutmeg together.
Cream butter or margarine & sugar together until light & fluffy.
Add eggs & vanilla & beat until smooth.
Combine chocolate, milk & potatoes; blend until chocolate melts.
Add flour mixture & potato mixture alternately to butter or margarine mixture, beating
until smooth after each addition.
Fold in cherries.
Turn into 2 greased 8-inch layer cake pans.
Bake in 350° for 30 min., or until cake tests done.
Cool.
Frost and garnish with additional mint flavored green cherries, as desired.
