Spinach With Pine Nut Dressing
Ingredients
1/2 Cup chopped pine nuts
1/4 Cup olive oil
3 TBS. tarragon vinegar
1/4 tsp. grated lemon peel
1/2 tsp. salt
Dash of nutmeg
6 Cups small spinach leaves, torn into pieces
Directions
If you want to toast the nuts for this dressing, spread on a baking sheet and place in a 350° oven for about 5 minutes.
Mix pine nuts, oil, vinegar, lemon peel, salt and nutmeg for the dressing.
Pour over spinach and mix gently.
Serves 6
